For more than a decade, Siam Carving Academy (SCA) has welcomed students from all over the world to learn the culinary art of Kae Sa Lak (Fruit and Vegetable Carving). The heart & soul of Siam Carving Academy is International award-winning and distinguished Master Carver Wan Hertz. Her skill as an artist and personalized approach to teaching truly sets her technique a cut above instruction available elsewhere.

Medals from numerous competitions have made SCA the first and only school of its kind to win approval from the American Culinary Federation as a Continuing Education Provider.

About Wan Hertz

Wan HertzWan Hertz brings over 30 years of experience and a lifelong passion for the very sophisticated Thai Culinary Art of Fruit & Vegetable Carving to her instruction, as well as to her own work. Learning to carve from her grandfather at the tender age of 11, she honed her skill over the years with events, demonstrations and some private teaching in the Thai tradition.

In 2006, she won the Gold in the Salon Culinaire International Carving Competition. And although she doesn’t compete often, she took 1st Place in the Brazilian Carving Cup in 2008. As a result of her success and growing reputation as a carver without peer, she was chosen by the Taipei sponsors, to serve on an elite panel of judges for the largest carving competition in Asia in the summer of 2013.

After studying Traditional Thai Cuisine & Fusion at Kasetsart University under Chef Champol of the Blue Elephant, she returned to her other passion…teaching. For the past decade, she has been skillfully instructing students from around the world and all walks of life in her private Bangkok studio.

She offers her courses for Beginning, Intermediate and Advanced carvers. Some of the world’s top chefs and well-known celebrities have sought out Wan’s unique mix of exceptional skill, both as an artist and as a teacher. As a consequence, she has been invited to appear as a guest on Asian television with Heny Sison and with Giada DeLaurentiis on the Cooking Channel. Monini Olive Oil showcased Wan’s exquisite work in a long-running and very successful ad campaign.

As an instructor, she tailors each course to the student, with a focus upon what they want to master and their level of skill.  Wan’s teaching method makes it possible for students to effectively learn remarkable skills in a short period of time.
